About The Beans

This coffee comes from a group of smallholder farmers in Tenejapa, a mountainous municipality near San Cristobal in Chiapas with a rich historyin coffee production. Each producer manages around 1.8 hectares of land, cultivating Typica, Caturra, Marsellesa, and Costa Rica variets at elevations between 1100 and 1400 meters. Once the coffee is harvested ripe it is treaded to a traditional washed processed and sun-dried on patios on the farms.

The coffee is decaffeinated at Descamex using the Mountain Water Process—an approach that uses a pure water from Mexico’s highest peak, Pico de Orizaba, to gently extract caffeine. The green beans are soaked to draw out both caffeine and flavor compounds; then, the caffeine is filtered out while the flavor-rich water is reintroduced to preserve the coffee’s character.

So nice, I bought it twice! Hachiko is yet another Wimp Decaf that is not just a great decaf coffee, it is a phenomenal coffee. (Period. Full stop.) Floral notes and good vibes for days. I can sip it to my heart's content without spinning up my pesky ol' monkey mind. Wimp rocks!

It's my second review in less than two weeks, but here we go again: I gotta give a big shoutout to Kahlo. I'm not a dark roast person at all (big light roast enjoyer), but, to me, Kahlo is the standard for what good specialty dark roast should be--minimally bitter with rich dark chocolate and caramel notes. I've made this coffee as a pourover, immersion brew, and a standard drip brew through an electric coffee maker, and it's always good no matter how you brew it. 10/10 would recommend Kahlo to anyone who enjoys their coffee roasted on the darker side. You won't be disappointed!

Bekele is another ELITE light roast offering from Wimp. Flavor notes are spot on, and the coffee has a very pleasant creamy texture. The chocolate note is followed with blueberry at the finish, and together they make a fantastic sweet/tart combo. Brewed at 200F as an immersion brew, I had ZERO bitterness. I can't believe this stuff is decaf.

I typically avoid dark roasts because I'm worried they will be too charred but even the darker Wimp roast is delicious. I look forward to drinking more Wimp Coffee.

It was soooo smooth, delicious and hit the right spot, my tummy, YAY!!! My husband liked it also, but he said wasn't as hot as he it should be. He cancelled my subscription. If I could buy some every other month, I would definitely do it. Thank you for this great decalf coffee!!!!!

I got it for a friend who described it as smooooooth and slightly sweet. She loves the adorable mascot and the name, too. The verdict: Five out of five Michael Jacksons. Obviously, a nod to his Smooth Criminal song. With a review like that, my next purchase will be for myself!

Rich, aromatic, and full of flavor, this dark roast was nothing like the weak coffee we’ve had before. Smooth and bold, it won us over instantly. Only later did we discover it was completely caffeine-free. What a wonderful surprise!

You cannot go wrong with Wimp Decaf. Their beans are top notch, and the people behind it are absolutely stellar as well. If you want an amazing coffee that doesn't give you the jitters and decaf that doesn't suck, this is the coffee for you. As a coffee fanatic and someone who's been in the industry for 4+ years, I can say without a doubt this is the only decaf you will ever need. It's that good.

Amongst all of the specialty decaf coffees I've tasted over the years from various roasters, nothing comes remotely close to the remarkable flavor and texture of Wimp's decaf coffees. No more sad bean water with that terrible, dry, lingering carpet of bitterness most decaf coffee leave in your mouth, making you feel like you're missing out on the good stuff. Hachiko is changing the game for the better. I literally wake up thinking about this stuff — it's just that good.

I have not yet tried all of them and I am also new to the pour over. First couple attempts the coffee was too fine. From what I can tell so far I like it but still too early to be sure.

Brewed with V60 and 16:1 ratio, this is the best decaf I've had. I don't get any chemical aftertaste, and I find the light roast Hachiko to be really flavorful.

I had originally rated as a 3/5 after making Coltrane with a french press and still tasting some of the "decaf aftertaste". I tried again with a V60 and had a really different experience - no aftertaste, really smooth, nice flavor. Likely the best decaf I've had. I'm upping my review to a 4/5, reserving a full 5/5 for a decaf that tastes as good as my favorite caffeinated beans (currently from Metropolis or Intelligentsia). I'm looking forward to trying out Wimp's Hachiko light roast next!

Seriously? You only do decaf?? Asked by Simon Cowell

Yes, Simon, we only do decaf. Almost every coffee brand you can think of has a host of regular choices and one single decaf choice, and from our experience that choice is the worst one. It's over-roasted, and the beans they chose to start with were bottom of the barrel. It doesn't have to be that way. It shouldn't be that way.

Decaf drinkers deserve a legit coffee. It's about time someone took it seriously. Too long has decaf been passed by when picking teams for dodgeball.

Also it's a very odd thing to get excited about decaf. Full acknowledged.

Does decaf cost more than regular coffee? Asked by Scrooge McDuck

Good question McDuck! It takes extra steps to remove the caffeine from coffee beans without losing that delish flavor.

The process basically entails the original producer (farmer) to take an extra step of shipping their green beans (pre roasted coffee beans) to their decaffeination processor of choice.

That decaffeination process takes labor, especially if it's the more sophisticated processes we prefer which preserve the taste more effectively and don't use nasty chemicals!

Then the decaffeinated coffee is returned to the producer who works with a distributor to get it from their home country all the way to us in Greenville, SC where we can roast those sweet sweet beans.

Overall on average it can add $2 per bag of coffee in overall cost. We promise to keep an eye on that with and for you though and reduce it when we can.

The real question I have is how you were able to jump into piles of metal money and not break your neck. I've been wondering that since I was a kid.

Hey Judy. Hope you're comfy up there. We believe in keeping things o' natural. No Methylene Chloride here (a common chemical used to decaffeinate many coffees). Just clean decaffeination techniques here at Wimp. Case closed.

Hey Roy. Quite frankly we just source better beans. Most coffee companies think so poorly of decaf they just find whatever beans are cheap and available and they roast the living shit out of them. Which, we've found, gives the decafs a kind of ashtray taste. Barf.

It doesn't have to be that way. We source higher quality beans from producers who's names we know, and who's decaffeination processes are clean, creative, and cutting edge. Better beans + hella good roasting. = better coffees. It's easy math.

Not at all, Gordon. Not everyone wants the same restaurant right? That's dumb. But it's like saying that all pizza restaurants have to use dairy free cheese, and every other type of cuisine gets to use the full cheese gamut — dairy and all. How dumb would that be.
